Among vineyards, olive trees, golden wheat and bright sunflowers, Sonia and Francesco created Cantina di Paglia — a winery born from love, nature and the rhythm of the seasons.
The philosophy of Cantina di Paglia is to blend tradition and innovation with simple wisdom, creating wines, olive oil and pasta that are not only delicious, but above all genuine — the kind of products we bring to the table every day.
Respect for nature is at the very heart of the project. The winery, nestled among the green rolling hills of Offida, was built using eco-friendly techniques: straw bales from our own fields form the walls, fitted into a wooden frame. On the roof, oversized solar panels provide more energy than we need, allowing us to contribute to Italy’s national green energy grid. Even our labels are printed on hay and vegetable fibers, a small but concrete gesture to reduce tree cutting. Each product is represented by a different animal from the traditional farmyard, illustrated by the talented Sara Oddi, recalling the roots of our local culture.
Sonia and Francesco are not alone in this journey. Their knowledge is deeply rooted in family history: Sonia’s family has been farming these lands for generations, preserving the agricultural wisdom of Offida, while Francesco carries forward the legacy of three generations of winemakers, dedicated to bringing out the very best in the local grapes.
